3 Refreshing Salads You Must Try

If you are a salad lover, this post is for you! If you are not a salad lover, these must-try salads are a fun way to incorporate veggies and fruits in one serving. Add in some yummy dressing, and it is deliciously impossible to resist. Here are three fresh salad recipes that will have you craving them every day.

Spinach Apple Salad

The first time I ever had a salad with fruit was a recipe that my sister-in-law made for Thanksgiving several years back. After trying it for the first time, I was hooked on salads with fruit. Since it is one of my absolute favorite salads, I request it anytime we get together. It’s fresh with the perfect mix of salty and sweet.

Salad Ingredients:

2 6-ounce packages of Baby Spinach (or Spring Mix)

2 large Granny Smith Apples

8-ounce Extra-Sharp Cheddar Cheese

1/2 C Walnuts (optional)

Dressing:

1/4 C Balsamic Vinegar

1/4 C Maple Syrup

1/4 C Olive Oil

Blueberry Peach Feta Salad by Recipe Runner

This salad is so refreshing and never disappoints when you are needing sweet and savory notes of flavor. I love how the feta cheese brings creaminess to each bite with the fruit and the cucumbers.

Salad Ingredients:

1 pint Blueberries

2 Peaches

2 Cucumbers

1/2 C Feta Cheese

Dressing:

1 Tbsp Basil

1 Tbsp Dijon Mustard

1 Tbsp Honey

3 Tbsp Lemon Juice (fresh)

1 Tbsp Olive Oil

Salt and pepper to taste

When I need a quick fix of more fiber and veggies in my diet, this is the salad. I crave these flavors for days and love to eat it for a light lunch without that heavy feeling after eating. Plus, my toddler loves this one too. He prefers ranch dressing, but either way, I can’t go wrong with this one.

Salad Ingredients:

1 16-ounce can Garbanzo Beans

1 16-ounce can Kidney Beans

1 Cucumber

Chopped Green Onion

8-ounce block of Mozzarella Cheese (cut in cubes)

Salt and pepper to taste

Pinch of Oregano

Dressing:

1/2 C Italian dressing (I like to use Ken’s Steak House Italian)
