Easy Weeknight Chicken Pitas

Coming up with dinner ideas, especially after a long day, is tough! One of our favorite weeknight meals is a chicken pita. My toddler usually eats a deconstructed version, while my husband and I enjoy customizing it with our own toppings which consist of whatever is in the fridge.

Ingredients:

  • Chicken breast (I air fry raw chicken at 390° F for 22 minutes, rotisserie chicken works too!)
  • Salad mix
  • Cucumber
  • Red onion
  • Cherry tomato
  • Pita
  • Feta (optional)
  • Olives (optional)
  • Greek yogurt sauce (optional)

Greek Yogurt Sauce

Depending on what I have on hand, I like to make a Greek yogurt sauce, inspired by Tzatziki Sauce, to add to my chicken pita.

In a bowl, mix 5 oz of plain Greek yogurt with three cloves of minced garlic, a pinch of dried dill, pepper, and the juice of a small lemon. Adjust the quantities to suit your taste.

If you’re looking for something more authentic, this recipe is excellent.

Instructions:

  1. Chop or shred your rotisserie chicken.
  2. Chop and prepare your vegetables.
  3. Warm the pita in the microwave for 10 seconds.
  4. Assemble the pitas.
  5. Enjoy!
