Venison Green Chile Alfredo :: A Hearty Meal for the Hunting Family

Hunting season is upon us! For our family this means potentially having two deer and an elk in the freezer. So I scour the internet year round for wild game recipes. I recently found this one for Venison Alfredo, and with a little tweaking it has become one of our favorites! It’s quick, easy, healthy, and delicious! However it does not photograph well, so my apologies for lack of pictures. If you’re not into venison, read on because this can easily be made with chicken as well. 

Venison Green Chile Alfredo

Ingredients: 

1lb Venison Steak (Backstrap works awesome in this!)

Cajun seasoning

Dried basil

Italian seasoning

Lemon pepper

Garlic powder

Black pepper

Olive oil

2-3 Green chiles

1 Tomato

1 Green onion

3 Cups half and half

2 Cups shredded Mozzarella cheese

1/2 Cup grated Parmesan cheese

1 Box of your favorite pasta

Directions:

-Slice the meat into medallions and tenderize thoroughly. Then cut the steak into thin strips. Transfer the strips into a bowl, add 1tsp of olive oil and season with the Cajun seasoning. Set this aside while preparing the other ingredients.

-Dice the green chile, tomatoes, and green onions.

-Bring a pot of water to a boil for your pasta.

-Heat a large skillet and brown the steak over medium heat.

-When the steak is almost completely browned, stir in the green chile and finish cooking the steak.

-Once the steak is cooked, gradually stir in the half and half, followed by 2tsp dried basil, 1tsp Italian seasoning, 1/2 tsp lemon pepper, 1/2 tsp garlic powder, and 1/2 tsp black pepper. Bring this to a low simmer.

-Stir in the Mozzarella, followed by the Parmesan. Turn down the heat to low once everything is melted and mixed well, this way the sauce won’t over cook while you get ready to serve.

-Get your pasta in bowls and top it with the sauce, then garnish with the tomatoes and green onion. The original recipe called for mixing everything together and then serving, but this way works much better. Trust me!
