Summer is here! And that means backyard barbecues and yummy desserts. If you want something truly easy that screams summertime-these easy Strawberry Lemonade Sugar Cookie Bars are for you!

What you’ll need:

-1 box of your favorite sugar cookie mix (I used Betty Crocker)

-Zest and juice of 1 Lemon

-5-6 strawberries depending on size

-1 canister of your favorite vanilla frosting (I used Great Value)

Directions:

  1. Make the sugar cookie dough as directed. Then add 1/2 of the juice from the lemon and 1/2 of the zest from the lemon.
  2. Spread dough evenly in a 9×13 dish or a quarter sheet pan and bake according to the box mix instructions. The edges should barely start to brown when you take them out of the oven.Easy Strawberry Lemonade Sugar Cookie Bars
  3. While the bars are cooling, dump your can of frosting into a bowl or mixer. Beat the frosting for 1-2 minutes so it gets lighter and fluffier. Then add the rest of the lemon juice and zest. Beat until combined.
  4. When the bars are fully cooled (it’s hard to wait, but it’s important–I promise!), spread the frosting across the cookie bars.

  6. Serve and enjoy!

These cookie bars are easy, and you can adjust the lemon flavor however you like. I like mine full of lemon flavor, but if you find it’s too much for you, you can always cut back. You can also adjust how much frosting you prefer as well as how many strawberries. I also think these would be tasty with blueberries as well.
