I think it is safe to assume we have all thrown away our fair share of overly ripe bananas–I know I have! A few years ago when my son was starting solids, I decided to look up recipes with ripe bananas to minimize waste. I came across a super simple recipe for yummy cookies that we still use to this day. And of course wanted to share it with you all!

You probably have the ingredients in your pantry as you read this. Get them out and give this recipe a try.

Peanut Butter Banana Oatmeal Chocolate Chip Cookies

Easy Peanut Butter Banana Oatmeal Chocolate Chip Cookies

Ingredients

2 ripe bananas (mashed)
⅓ cup peanut butter (or your preferred nut butter)
¼ cup semisweet chocolate chips
1½ cups rolled/old-fashioned oats

Directions

Preheat oven to 350° F.

Mash ripe bananas, then mix in the oats and peanut butter in a mixing bowl.

Fold in the chocolate chips.

Once all ingredients are mixed well, drop a spoonful of the mix onto a parchment-lined baking sheet.

Bake for 12-15 minutes.

Let them cool for approximately 5 minutes and enjoy!

You can also make this recipe dog friendly. Simply replace the semisweet chocolate chips with an apple (cut the apple into little squares). Your canine friend will love them!

This could be a super fun recipe to try with your littles as all ingredients can safely be ingested without cooking. Another great and easy recipe to try is these delicious Strawberry Lemonade Sugar Cookie Bars.  If you make any of these recipes, make sure to tag us @abqmom.
